We eat a lot of stir-fried vegetables and find ourselves looking to mix it up with different sauce combinations. This easy peanut butter based sauce is made from six simple ingredients in about fives minutes. With no-added-sugar, this recipe is a healthy alternative to a lot of stir-fry sauces. I saute about two pounds of vegetables and then cover them with the full amount of sauce this recipe produces. Stir-fry is a great way to use up veggies that need to be eaten, while also getting a variety of nutrients.
To give you some ideas, vegetables that work well in stir-fry include cabbage, carrots, mushrooms, bell pepper, haricot verts, broccoli, cauliflower, and sugar snap peas. Really, I think any veggie would go well with this stir-fry sauce. I usually serve stir-fry with plain jasmine or brown rice. However, for a really quick dinner, try brown rice noodles or eat these delicious saucy vegetables by themselves.

Easy Peanut Butter Stir-Fry Sauce
Ingredients
- 1/4 cup peanut butter
- 1/2 cup applesauce
- 1/4 cup tamari or soy sauce
- 2 cloves of garlic or 1 teaspoon garlic powder
- 1/2 teaspoon minced ginger
- 1/8 teaspoon cayenne pepper (optional)
Instructions
Combine all the ingredients in a mixing bowl and whisk until smooth.
Mix with approximately 2 lbs. of stir-fried vegetables.
