    Crunchy Kale, Fruit, & Nut Salad

    This delicious salad reminds me of cole slaw, only healthier than your typical slaw recipe. Growing up in the Midwest, slaw was and still is a cookout staple. We had creamy slaw and sweet and sour slaw, both made from pale green cabbage and smothered in way too much dressing. My mom actually makes a really good sweet and sour slaw that has craisins in it. I will have to get that recipe from her to share with you all at some point. In this recipe, I like the combination of kale, red cabbage, and brussels sprouts for the different crunch and flavors. The brussels sprouts bring a bit of spiciness, while the cabbage adds a subtle sweetness. Apples and raisins might seem odd to some, but they add sweetness and texture and are wonderful in here. The homemade dressing is zesty and pretty light. This is a great recipe to take to a cookout or pitch-in because it keeps so well with the dressing on it. You can make it the morning of or even the night before your party.

    Additions/Substitutions

    I really like using tarragon vinegar in dressings. However, it is not always the easiest to find. I have used coconut vinegar and apple cider in this recipe with success.

    I’ve only used spicy brown mustard in this recipe, but I imagine dijon mustard would work well. I plan to try it soon and will update when I do.

    If you want to make this salad more creamy, try adding chopped avocado on top, or mixing some into the dressing. It’s delicious. Just be aware that the avocado might brown. If you use avocado, I suggest adding it right before serving.

    Get creative with what you have! I’m sure there are other fruits and nuts that would be delicious on this salad. Let us know if you discover something great.

    This crisp salad recipe has kale, cabbage, brussels sprouts, apples, raisins, and almonds, and is a healthier, refreshing take on a classic slaw. Keeps well in the refrigerator, with or without dressing.

    Ingredients

    • For the Salad:
    • 4 cups curly kale, chopped and massaged
    • 2 cups purple cabbage, shredded
    • 2 cups brussels sprouts, shaved
    • 1/2 cup raisins or dried cranberries
    • 1 medium-sized apple, chopped (I use Gala apples)
    • 1/2 cup sliced almonds (can be toasted)

    • For the Dressing:
    • 1 tablespoon tarragon vinegar (or sub coconut vinegar or apple cider vinegar)
    • 1 tablespoon spicy brown mustard
    • 1 tablespoon lemon juice
    • 1 tablespoon honey (or maple syrup for vegan version)
    • 2 tablespoons oil (olive, grapeseed, and sunflower oil all work well)
    • 1/4 teaspoon garlic powder
    • 1/2 teaspoon coriander powder
    • 1 teaspoon of sea salt
    • freshly ground pepper, to taste

    Instructions

    Chop kale, cabbage, and brussels sprouts, and then add to a large bowl.

    Mix in the raisins.

    In a separate small mixing bowl, whisk the dressing ingredients until combined.

    Drizzle over the salad and toss to coat evenly.

    Add almonds and chopped apple just before serving. This salad keeps very well in the refrigerator, with the dressing on it.
