Oatmeal cookies have always been a favorite of mine. Oats add so much flavor and make for a soft and chewy cookie. I’ve certainly made healthier cookies, but this recipe is well worth the splurge every once in awhile.

Chocolate Chip Oatmeal Cookies
Ingredients
- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup brown sugar, packed
- 2 tablespoons cane sugar
- 1/4 cup butter, softened
- 1/4 cup sunflower oil
- 1 egg
- 1 teaspoon vanilla
- 1 cup chocolate chips
- 1/2 cup walnuts, chopped
Instructions
In a mixing bowl, combine oats, flour, baking powder, baking soda, cinnamon, and salt. Set aside.
In a stand mixer, add softened butter, sunflower oil, and sugar, and mix until creamy and combined.
Add egg and vanilla, and mix until combined.
While mixing on slow speed, add in dry ingredients.
Fold in chocolate chips and walnuts.
Let the dough rest in the refrigerator for 30 minutes.
Preheat the oven to 350 degrees Fahrenheit.
Using a cookie dough scoop or tablespoon, drop cookies on a lined cookie sheet.
Bake for 8-10 minutes.
