    10-Minute Sweet Potatoes

    My favorite quick preparation of sweet potatoes is in the microwave. They can be ready to eat in 10 minutes or less. Sweet potatoes can be a meal of their own, a side dish, or a great addition to various recipes. Our Mushroom Quinoa Burger Recipe as well as our Sweet Potato & Oat Buns Recipe both call for cooked sweet potatoes. I often cook sweet potatoes in the microwave for breakfast and eat them with yogurt and fruit. The recipe below is a step-by-step guide to microwaving whole sweet potatoes.

    An easy tutorial on preparing sweet potatoes in the microwave in 10 minutes or less. The sweet potatoes can then be eaten right away or used as an addition to another recipe that calls for cooked sweet potatoes.

    • sweet potatoes (as many as you need)

    Give each sweet potato a quick scrub. You can eat the skin!

    With a fork, stab the skin every couple inches or so. This prevents the skin from busting (although, it will occasionally still bust if cooked too long).

    Wrap each sweet potato (individually) in a cloth napkin.

    Place no more than 3 wrapped sweet potatoes at a time in the microwave and start by microwaving for 3 minutes.

    Flip each sweet potato over and then microwave for 3 more minutes.

    Give each potato a squeeze to check for doneness (be careful - they will be hot!) They may be done at this point, or may require additional cooking. If you are cooking more than one, you will most likely need to cook them longer. Flip and rotate the potatoes, and cook in 2-minute intervals checking them after each 2-minute cooking period. When done, all sides of the sweet potato should be softened. The inside doesn't have to feel completely softened, but you don't want any really firm spots. The sweet potatoes will continue to soften as you let them cool.

    Notes

    • Cook time for 1 sweet potato will be less than cooking 2 or 3 at a time. Microwave cooking varies dramatically so check the potatoes after each interval.
