Beets make the most beautiful smoothies. I know looks aren’t everything, but this one sure is pretty and it tastes great too. The full smoothie recipe consists of beets, avocado, blueberries, strawberries, avocado, and spinach. Avocado adds creaminess in place of my usual banana. I actually make a very similar beet & banana smoothie when I don’t have avocados on hand. You can drink this smoothie instead of pouring it into a bowl, but I like eating it with a spoon. I tend to be a quick eater and can slurp down a smoothie in no time. Using a spoon forces me to slow down and savor each bite. Plus, I love topping it with granola and a drizzle of almond butter.
Adding Protein
Feel like your breakfast needs a bit more protein? Sunwarrior is my favorite brand of plant-based protein powder right now. If I include protein in this smoothie, I use their Vanilla Warrior Blend. One scoop has 18 grams of plant-based, vegan protein and provides a full amino acid profile. It is lightly sweetened with stevia extract, which makes the smoothie a bit sweeter than going without.

Beet & Berry Smoothie Bowl
Ingredients
- 1/2 cup raw beets, peeled and cubed
- 1/2 ripe avocado
- 1/2 cup blueberries, frozen
- 1/2 cup strawberries, frozen (or frozen mango)
- 1 handful fresh spinach
- 1/2 cup water (or more to make a thinner smoothie)
- 1 scoop vanilla protein powder (optional; we like SunWarrior protein powder)
- ice, depending on cold preference
Instructions
Combine all the ingredients in a blender and blend until smooth.
