A crunchy salad can be very satisfying. I’m typically a fast eater and I love how this Asian chopped salad slows me down so that I enjoy every bite. If you are looking for a crisp, refreshing salad that is wholesome and filling, you’ve found it!
The peanut dressing contains tamarind paste, which has proved tricky to find in the past but now seems to be available at most grocery stores. I picked up a 12 oz. jar of Aunt Patty’s Organic Tamarind Paste at my local Fresh Thyme in the Asian dry goods section. A little tamarind goes a long way, and that jar will probably last me a year.

Asian Chopped Salad with Peanut Dressing
Ingredients
- 2 cups kale, chopped
- 2 cups cabbage, chopped
- 1/2 cup carrots, shredded
- 1/2 cup edamame, shelled and cooked
- 1/8 cup red onion, finely sliced
- 1/4 cup peanuts, roughly chopped
- For the Dressing:
- 1 tablespoon peanut butter
- 1 teaspoon tamarind paste
- 2 tablespoons tamari or soy sauce
- 1/4 teaspoon garlic powder (or 1 small clove minced)
- 1/4 teaspoon sriracha (optional)
Instructions
Prepare the ingredients for the salad and then combine, making two large salads.
In a small bowl, mix the ingredients for the dressing with a whisk. Pour over the salads and toss to coat.

Notes
- This salad keeps well in the refrigerator for a day or two, even with the dressing on it.
- For those with nut allergies, try substituting tahini butter in the dressing and leaving the peanuts off the salad.
