Lemon Miso Brussels Sprouts
Ingredients
- 1 lb. brussels sprouts
- 2 cloves garlic, minced
- 1 tablespoon lemon juice (preferably, freshly squeezed)
- 1 tablespoon miso paste
- 1 tablespoon tamari or soy sauce
- 1 teaspoon honey (optional)
- 1 tablespoon olive oil
- freshly ground black pepper, to taste
Instructions
Rinse brussels sprouts if needed.
Cut the tough stem off the brussels sprouts and then cut in half.
In a small bowl, mix garlic, lemon juice, miso paste, tamari, honey, and black pepper. Set aside.
Pan-seared method (recommended): Heat olive oil in a large skillet over medium-high heat. Once heated, add the brussels sprouts and stir to coat in oil. Cover and cook for about 5 minutes, stirring occasionally. If the brussels sprouts don't sear, you may want to turn up the heat. Add sauce to the pan with brussels sprouts and stir to coat. Continue to cook for about 5 more minutes.
Oven-roasted method: Heat oven to 425 degrees Fahrenheit. Toss brussels sprouts in the sauce and olive oil, and then evenly distribute on a roasting pan. Cook for approximately 15 minutes, stirring once after about 7-10 minutes.
Serve immediately.

Notes
- To make this recipe vegan, simply leave out the honey or replace with a different sweetener.
