    Vegan Mac & Cheese with Broccoli

    Alex and I are really into raw cashews as a base for cheese replacement. Though, nutritional yeast is the ingredient in the recipe that is key to getting the cheese-like flavor. In addition to having great flavor, nutritional yeast is a great source of several vitamins and minerals.     We created our own vegan cashew cheese sauce recipe, and use it in many different ways. With the addition of a few spices, it is the “cheese” sauce in our macaroni & cheese recipe below. Pasta with cashew-based cheese sauce is somewhat different than traditional macaroni and cheese, but every bit as delicious.

    Vegan Mac & Cheese with Broccoli

    Looking for a quick and easy dairy-free dinner? This crowd-pleasing vegan macaroni and cheese recipe takes 30 minutes or less to prepare.

    Ingredients

    • 8 ounces of macaroni (or your pasta of choice), or 2 cups dry
    • 1 head of broccoli
    • 1 cup raw cashews
    • 2 tablespoons nutritional yeast
    • 1 clove garlic
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon mustard powder
    • 1 teaspoon salt
    • pepper, to taste
    • 1 cup of water

    Instructions

    Prepare pasta according to the directions on the package. Reserve pasta water when draining in case you want to thin the cashew sauce later.

    Chop broccoli into small pieces and add to a medium pot along with 1/2 inch of water.

    Cover and boil for 5 minutes. Turn off the stove and allow it to steam until tender, then drain.

    Combine cashews, nutritional yeast, garlic, smoked paprika, mustard powder, salt, and 1 cup of water in a food processor. Blend until smooth.

    Combine cooked pasta, broccoli, and cashew sauce. Thin with reserved pasta water if needed.
