    Potato & Ranch Pizza (Dairy-Free)

    The idea for potato & ranch pizza came from one of our favorite pizza joints in Evansville, which happens to be a couple of blocks away from our house. I’ve been going to The Slice since I was young and have nothing but fond memories there. It’s fun being able to take my daughter and enjoy the same pizza with her that I loved as a child. This vegan potato and ranch pizza is a pretty simple recipe. You won’t find cheese in this recipe and I don’t think you will miss it. We definitely don’t.

    I make dairy-free ranch for this pizza, which is just as delicious as any ranch I’ve had thanks to Forager’s Cashewgurt. Feel free to experiment with other dairy-free products as the base and let me know what you think.

    We hope you will try making your own pizza crust at some point, but it does require some planning. If you are looking for a quick dinner idea, try buying naan (or flatbread) to use. It makes a really delicious pizza crust, grills well, and couldn’t be any easier.

    Potato & Ranch Pizza

    Simple and delicious, this vegan pizza is topped with a homemade 5-ingredient ranch sauce and fried potato slices. No cheese or cheese replacements in this recipe.

    Ingredients

    • For the ranch:
    • 1 cup plain cashew yogurt (We love Forager's Cashewgurt)
    • 1 teaspoon onion powder
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon salt

    • For the pizza:
    • pizza dough (try our homemade pizza crust recipe or you can use store-bought crust)
    • 2-3 medium-sized potatoes
    • 1 tablespoon olive oil
    • garlic salt, to sprinkle on potatoes

    Instructions

    Scrub potatoes, and then dry them.

    Preheat a large skillet over medium/medium-high heat. Add olive oil to the pan.

    Meanwhile, cut the potatoes into 1/8-1/4 inch thick slices. Sprinkle lightly with garlic salt.

    Fry the potatoes for about 4-5 minutes on each side or until browned. Set aside.

    In a small mixing bowl, mix together the ranch ingredients.

    Preheat the oven to 450 degrees Fahrenheit (you can use convection if you have it to get a crispier crust)

    Stretch the pizza dough to your desired thickness and place on a pre-heated pizza stone or baking sheet. Smear on a thick layer of the ranch sauce, and then top with the potatoes.

    For a thin crust pizza bake for 8-10 minutes. Baking time will vary depending on thickness.
