This delicious protein smoothie is a great breakfast option when you are looking for something quick and easy to take with you. The banana adds a bit of sweetness, while the pistachios give it a wonderful nutty flavor. Cardamom is optional but really takes this smoothie up a notch. Sunwarrior is my favorite brand of plant-based protein powder right now. In this recipe, I use their Vanilla Warrior Blend. One scoop has 18 grams of plant-based, vegan protein and provides a full amino acid profile. It is lightly sweetened with stevia extract.

Pistachio Protein Smoothie
Ingredients
- 1/2 ounce raw, shelled pistachios (about 2 tablespoons)
- 2 handfuls raw spinach (about 1 cup packed)
- 1 medium-sized banana
- 1 scoop Sunwarrior vanilla protein powder
- 3/4-1 cup crushed ice
- 1 cup unsweetened almond milk
- 1/8 teaspoon cardamom (optional)
Instructions
Combine all the ingredients in a blender and blend until smooth.
