    I’ve come to learn how easy vegan baking is. For fun, I’ve been taking my favorite recipes and converting them to vegan, and it is surprisingly simple. Today, you are getting my vegan version of the chocolate chip banana muffins my family loves. Overripe bananas are pretty much inevitable, and what better way to use them than in a muffin. These delicious vegan muffins are healthy-ish and quite a nice little treat. And I don’t feel bad about letting my three-year-old eat one for breakfast.

    Use up your overripe bananas with this gluten-free, dairy-free, and healthy-ish muffin recipe. Chocolate (chips) and bananas always go well together and these oh-so-delicious muffins are no exception.

    Ingredients

    • 2 large bananas, mashed
    • 2 tablespoons flaxseed meal
    • 1/2 cup almond milk
    • 1/4 cup granulated sugar
    • 1/4 cup vegan butter, melted (I use Earth Balance)
    • 1 1/2 cups gluten-free baking flour (You can substitute all-purpose flour if you don't want to use gluten-free flour)
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/2 teaspoon cinnamon
    • 1/4 cup mini semi-sweet chocolate chips (I like Enjoy Life brand)
    • 1/2 cup chopped walnuts

    Instructions

    In a mixing bowl, mash the bananas. I like to mash them and then beat them with a fork until smooth. You can leave chunks if you prefer.

    Add in flaxseed meal, almond milk, and melted butter, and stir until combined. Set aside.

    In a separate bowl, mix together flour, sugar, baking powder, baking soda, salt, and cinnamon.

    Pour the dry ingredients into the banana mixture and mix until combined. Do not overmix the batter.

    Fold in the chocolate chips and chopped walnuts.

    Preheat the oven to 350 degrees Fahrenheit.

    Oil a standard 12-cup muffin tin and then evenly disperse the batter, filling each cup 2/3rds full.

    Bake for 17-20 minutes. You can test for doneness by inserting a toothpick into the middle of the muffin. It will come out clean when the muffins are done.
